Mexican Food Recipes – Mexican Wedding Cookies

Sometimes Mexican food recipes will have you dirtying up every single pot and pan in the house, but that isn’t the case with this these delicious Mexican Wedding Cookies. You have probably had these wonderful little bombs of delight before and didn’t realize that they were a traditional Mexican cookie, now you know and soon you’ll be making them in your own kitchen. They are very easy.

Mexican Wedding Cookie Recipe

What You’ll Need:

1 cup of Salted Butter, softened
½ cup Powdered Confectioner’s Sugar
2 teaspoons Vanilla Extract
2 cups of White All-Purpose Flour
2 tablespoons Cold Water
¼ teaspoon of fine Salt
1 cup Chopped Pecan Nuts

Additional powdered sugar for dusting the cookies

Directions:

Put the butter, sugar and vanilla together in your mixing bowl and blend until creamy.

Add the flour, water, salt and nuts.

Mix until it is just mixed, do not overmix it. You want to have it so that it just stays together. This helps the texture stay light and crumbly instead of tough and hard.

Make round cookies about 2 – 3 tablespoons in size. Place them on a parchment lined cookie sheet.

Preheat the oven at 300 degrees. Bake for 20 minutes.

Remove from the oven and sprinkle powdered confectioner’s sugar on the cookie.

Let cool until completely cold and then you can store them in a tin or bag at room temperature.

Substitutions

You can substitute another nut like almond slivers or chopped walnuts. It will change the flavor quite a bit.

You can use a butter substitute like Nature’s Balance if you need to avoid dairy. You might want to add a little butter flavoring oil to it if you don’t use actual butter.
