Here is an authentic Mexican Rice recipe that uses more natural ingredients than you’ll find in the rice served in Mexican restaurants. You’ll like this a lot more.
Mexican Rice Recipe
The key to this recipe, like any Mexican food, is to use the freshest and homemade ingredients.
Ingredients:
2 large Tomatoes
1 cup White Rice
1 cup Chicken Broth
1 cup Water
1 clove Garlic
1 small Onion, minced
2 tablespoons Olive Oil
Put the rice in a bowl of very hot water. Let it soak for 15 minutes.
Wash and slice the tomatoes. You can peel it, but you don’t have to unless the little strips of peel will bother you. Set aside.
Mince the garlic and onion and set aside.
Strain the rice then put it back in the bowl. Add cold water. Swish around the rice and squeeze it to get it clean. Drain it and do this again two more times. Then put it in a strainer and shake out as much water as possible.
Heat a frying pan then add the olive oil. Add the cleaned rice. Fry the rice, stirring occasionally, until it just starts to brown.
Add the onions and garlic. Continue to fry until the onions become translucent.
Add the sliced tomatoes. Fry this mixture until the tomatoes start breaking down and getting very mushy.
Pour in the chicken broth and bring to simmer. Cover and simmer until the broth is absorbed.
Add the cup of water, stir and transfer it to a rice cooker or cover it again. Bring it to a strong simmer, cook for 5 minutes then turn it off. Let it steam for 15 minutes then serve.
Additions:
You can add real bacon bits or minced bell pepper to this authentic Mexican Rice recipe, if you’d like something a little different occasionally.
