Huevos Rancheros is the standard Mexican breakfast dish here in the USA. It is the Mexican answer to Eggs Benedict, but a whole lot spicier! Cha, cha, cha. This standard and yummy breakfast features eggs cooked sunny side up and placed on tortillas grilled in butter. A nice, big scoop of ranchero sauce is dolloped on top.
When you’re wondering what to do with the last of your beef roast leftovers save it for Machaca con Huevos. This tasty dish is mostly shredded beef, but it is grilled with onions, a little bit of minced garlic, sliced fresh tomatoes and a couple of beaten eggs poured on top. It isn’t much of an omelet. It is more of a scrambled eggs dish that lost its mind. Toss in some salsa and serve with warm, corn tortillas.
If you are suffering from a hangover as big as Mexico, it is Menudo to the rescue. Traditionally, this is going to be served up before you go to bed. But, getting up in the morning and finding your Menudo cure, might be just the ticket. Menudo is a spicy tripe broth soup that features a lot of lime, spices and cilantro. It gives you everything you need to survive the day after tequila and restores your machismo(a).
